Our First Trip to Zanzibar

Before there was a sauce, there was a trip. Zanzibar wasn't a planned destination so much as a place that kept coming up in conversation until it stopped being avoidable — and it turned out to be the kind of place that reorders your sense of what a meal, a market, or an afternoon is supposed to feel like.

Spice markets stacked with cinnamon bark, cardamom pods, and chillies in more colours than seemed reasonable. Dhow boats leaning against the tide at low water. And food that didn't separate "hot" from "sweet" from "savoury" the way a lot of Western cooking does — it just let them sit in the same spoonful.

That trip is also where the founder met Janet, who was born and raised in Tanzania. Everything that came after — the family, the recipes, eventually the sauce — traces back to those first few weeks on the coast.
